Butternut Squash Risotto Recipe

Butternut Squash Risotto

Ingredients
- 1/2 whole Butternut Squash, Peeled, Seeded, And Diced.
- 3 Tablespoons Butter
- 1 Tablespoon Olive Oil
- 1/2 teaspoon Kosher Salt
- Black Pepper To Taste
- 1/4 teaspoon Chili Powder
- 1/2 whole Diced Onion
- 1-1/2 cup Arborio Rice
- 6 cups (approximately) Vegetable Or Chicken Broth (low Sodium)
- Salt And Pepper, to taste
- 1/8 teaspoon Turmeric
- 1/4 cup Heavy Cream (less If Desired)
- 1/2 cup Parmesan Shavings (more For Serving)
- Finely Minced Parsley, For Serving
Preparation Instructions
Heat 1 tablespoon butter and olive oil in a large skillet over high heat. Add squash and sprinkle with salt, pepper, and chili powder. Cook for several minutes, turning gently with a spatula, until squash is deep golden brown and tender (but not falling apart.) Remove to a plate and set aside.
Heat broth in a saucepan over low heat. Keep warm.
Add 2 tablespoons butter to the same skillet over medium-low heat. Add onions and cook for 2 to 3 minutes, or until translucent. Add Arborio rice and stir, cooking for 1 minute.
Reduce heat to low. In 1-cup increments, begin adding broth to the skillet, stirring to combine and gently stirring as the broth is absorbed. As soon as the liquid disappears, add in another cup to cup-and-a-half of broth. Continue this process, stirring gently as the broth incorporates and the rice starts to become tender. Add salt, pepper along the way.
Taste the rice after about 5 cups of broth have been absorbed and see what the consistency is. Add another 1 to 2 cups of broth as needed to get the rice to the right consistency: it should be tender with just a little bit of "bite" left to it.
When the rice is tender, add in the cooked squash and turmeric and stir it in gently. Add the cream and Parmesan shavings and stir until it's just combined. Taste and add more salt and pepper as needed.
Sprinkle minced parsley over the top and serve immediately!

Inspired Friday: gorgeous recipes (BERRY MOUSSE AND LEMON POPPY SEED CAKE VERRINES)
One year ago: Lemon Meringue Cake with Lemon Ice Cream.Two years ago: Birthday Girls and a chocolate cake.
Berry Mousse and Lemon Poppy Seed Cake Verrines:
Makes enough for ten to twelve 6 to 8 oz ramekins or glasses
For the cake:
1 1/2 cups (185gr) all purpose flour
1 cup (200gr) sugar
1 tablespoon (14gr) baking powder
1/4 (1.5gr) teaspoon salt
1/2 cup egg whites (about 3-4)
3/4 (175ml) cup milk
1/4 cup (62.5ml) lemon juice
grated zest of one lemon
1 tablespoon (9gr) poppy seeds
1 stick (113gr) unsalted butter, melted and cooled
For the strawberry mousse:
2 teaspoons powdered gelatin
1 tablespoon water
8 oz (210gr) strawberries, pureed
1/4 cup (50gr) sugar
1/2 teaspoon lemon zest
1 tablespoon lemon juice
3/4 cup (6oz - 190ml) heavy cream
For the blackberry mousse:
2 teaspoons powdered gelatin
1 tablespoon water
8 oz (210gr) blackberries, pureed
1/4 cup (50gr) sugar
1/2 teaspoon lemon zest
1 tablespoon lemon juice
3/4 cup (6oz - 190ml) heavy cream
Limoncello
Prepare the cake: preheat oven to 300F. In a large bowl, stir together all the dry ingredients for the cake. Set aside. In a separate medium bowl stir together the egg whites and the milk. Make a well in the center of the flour mixture and slowly add in the egg white mixture while stirring with a whisk. Stir in the lemon juice, zest, the poppy seeds and the melted butter. Mix with a whisk until smooth. Line a quarter sheet pan with parchment paper, lightly spray with cooking spray and pour in the batter. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely and cut out as many disks as you need to fit inside your ramekins or glasses.
Prepare the strawberry mousse: sprinkle the gelatin over the water in a small bowl and set aside to bloom (soften).
In a medium saucepan set over medium heat, stir together the strawberries and sugar just until hot. Add the gelatin and stir until it is completely melted. Let cool to room temperature. In the meantime, whip the heavy cream to soft peaks. Once the strawberries are at the right temperature, carefully fold the whipped cream into the fruit base.
Prepare the blackberry mousse the same way.
Assemble the verrines: brush Limoncello on each of the cake pieces or rounds that are going to be used in the glasses. Place a cake round at the bottom of the glass, top with blackberry mousse, one cake round, strawberry mousse, one cake round, blackberry mousse. Finish with more wipped cream if desired (I added lemon zest to mine).

5 Stars: In the Barn
It has a premise that resembles that of a cheap porno, but the scenes are nonetheless very taboo and very hot! It's a very short story (be warned: only about half the file is the story... the other half is promotional goodies from the publisher, excerpts for Kitts's other works, etc.) of sexual discovery and awakening that packs a huge punch. Very arousing. I would not have paid $2.99 for it obviously, but this is a great free read.

3 Stars: A Twisted Bard's Tale
A great erotic spoof to ROMEO AND JULIET with f/f action that's arousing, sensual, and very very taboo. The scenes aren't remarkable--I won't be thinking of them tomorrow--and I found many historical and stylistic inaccuracies. For instance, Kitts mentions that Lady Capulet nursed Juliet when one of the very obvious facts of the play is that Juliet had a wet nurse. There are also phrases like "anon" thrown in for good measure, but they're ill-fitting for the story as a whole.
